How to Make Ginger Simple Syrup

1 cup fresh ginger, peeled and sliced thin

2 cups water

2 cups granulated sugar

Optional: juice of ½ lemon or lime for a bright finish
Instructions

Prep the ginger:
Peel and thinly slice 1 cup of fresh ginger. The thinner the slices, the more flavor will infuse. -
Combine ingredients:
In a medium saucepan, add the sliced ginger, 2 cups water, and 2 cups sugar. Optional: add lemon or lime juice. -
Heat and dissolve:
Place over medium heat and stir until the sugar fully dissolves. -
Simmer:
Bring to a gentle simmer for 15–20 minutes. The syrup will thicken slightly and the ginger flavor will concentrate. -
Cool and strain:
Remove from heat, let cool, and strain the syrup into a clean jar or bottle. Discard the ginger slices or save them for garnish. -
Store:
Keep refrigerated for up to 2–3 weeks.
