How to Make Ginger Simple Syrup

Zesty, spicy, and perfect for cocktails, mocktails, and sparkling beverages

Ingredients

  • 1 cup fresh ginger, peeled and sliced thin

  • 2 cups water

  • 2 cups granulated sugar

  • Optional: juice of ½ lemon or lime for a bright finish


Instructions

  1. Prep the ginger:
    Peel and thinly slice 1 cup of fresh ginger. The thinner the slices, the more flavor will infuse.

  2. Combine ingredients:
    In a medium saucepan, add the sliced ginger, 2 cups water, and 2 cups sugar. Optional: add lemon or lime juice.

  3. Heat and dissolve:
    Place over medium heat and stir until the sugar fully dissolves.

  4. Simmer:
    Bring to a gentle simmer for 15–20 minutes. The syrup will thicken slightly and the ginger flavor will concentrate.

  5. Cool and strain:
    Remove from heat, let cool, and strain the syrup into a clean jar or bottle. Discard the ginger slices or save them for garnish.

  6. Store:
    Keep refrigerated for up to 2–3 weeks.

  • Spicier syrup: Leave ginger slices in while storing.

  • Citrus boost: Add lemon, lime, or orange peel during simmering.

  • Honey or maple syrup: Substitute sugar for a different flavor profile.
